Oreo cheesecake with forest fruit

 

I love oreos, strawberries and cheesecake.
I am also an indecisive person person.
I think that's because I am libra in horoscope that's why I want it all ... or not?
And if I had  to choose between oreo biscuits, cheesecakes and strawberries (chopped with chocolate, of course)
my dialing would last longer than the preparation of any cake.
And I would always wonder if my decision was the best.. or not hahah.
That's why I was thrilled when I discovered that all of these ingredients I can mix and make a cake that includes everything from the list so without too much analysis I can prepare Oreo cheesecake with forest fruit and just enjoy...

WHAT YOU NEED: 
350 g oreo biscuits
100 g malaca

FOREST FRUIT CREAM:
450 g of frozen forest fruit
100 ml of water
100 g of sugar
40 g of density

CHEESE CREAM:
500 g of mascarpone cheese
500 g of sweet cream
2 vanilla sugars
3 tablespoons of powdered sugar
1 gelatine
10 oreo biscuits

INGREDIENTS FOR TOPING:
5 oreos
fresh strawberries, raspberries and / or blackberries

Preparation:
1. Let's start with the preparation of the substrate.
In one bowl we mix Oreo crackers and mix them with melted butter.
At the bottom of a mold of 26 cm we put on it and place on it the baking paper to which the molten mixture is applied.
Prepare the substrate for refrigeration in the refrigerator while we prepare cheese and fruit creams.

2. Preparation of forestry cream creams:
Place 450 g of forest fruit in a small pot together with 100 g of sugar and half the amount of water (50 ml of water) and cook on low heat until the forest fruit is left out.
In the other small vessel, we add the remaining 50 ml of water to the dough that we add to the melted forest fruit and mix until lightly frozen.
When we want the woody fruit we want it weighed lightly, moved it to another bowl and let it cool to room temperature while we prepare cheese cream.
While the cream is cooled we mix it several times so as not to create a crease.

3. Preparation of cheese creams:
According to the instructions on the package, dissolve the gelatin, leave it for 10 minutes to swell and then settle on light heat.
In the second dish, we mix 500 grams of mascarpone cheese with vanilla sugar, powdered sugar and dissolved gelatine.
Finally, add 500 g of sweet cream to the pan and mix the entire cream for 2-3 minutes to become firm enough.
In a special bowl, we chop oreo biscuits (10) and allocate the amount obtained into two equal parts.

When all the creams are finished, remove the chilled base from the fridge and with the knife we ​​go around the rim to remove the mixture from the baking sheet nicely.
We slice 1/3 cream cheese over the substrate, place half of the chopped oreo cookies and top half of the cream of the forest fruit.
The procedure described is repeated once more, and put the rest of cheese creams on top of the cake.
Put the prepared cake in the fridge for cooling as long as possible,
and before the serving we decorate it with the remaining chopped oyster biscuits and fresh forest fruit.
